Self-Service Udon Now Spans Three Countries, with the First European Store Opening in London in 2020

Kineya Mugimaru's move into Europe began with its 2020 entry into London. The brand opened its first European store at St Pancras, a major rail hub, serving self-service udon in which the noodles are finished to order. Customers buy a meal ticket from a vending machine and pour their own broth, which keeps queues moving smoothly even at peak times. The brand's practice of making noodles in-store also comes up repeatedly in visitor reviews, including at this high-traffic station location.

Before entering Europe, the brand had already established stores in the United States and Hong Kong, and today it operates across three countries and regions: the United Kingdom, the United States, and Hong Kong. In the UK, stores are located in London (St Pancras, Embankment, and Wimbledon), Cambridge, and Ealing. Overseas locations are run by local partner companies under franchise or license agreements, and the operator, Gourmet Kineya, is also recruiting overseas franchisees.

Key Features of the Overseas Franchise

The Brand's Core, Refined Over Half a Century — Osaka-Born Broth and In-House Sanuki-Style Noodles

Kineya Mugimaru's operator, Gourmet Kineya, is a long-established company that has specialized in udon across three generations since opening its first udon shop in Osaka in 1967. The operating company is listed on the Tokyo Stock Exchange Prime Market (ticker 9850) and runs several hundred locations across its group, giving the brand a company-wide system for developing flavor and managing procurement rather than relying on a single store.

At the core of the brand is not simply a long history but a clearly defined character of flavor. The first element is an umami-rich broth prepared in the Osaka tradition. Used in many of the brand's signature dishes, its proprietary "Kineya's Original Broth" is a taste distinct to the company, refined on the foundation of Kansai's broth culture. The second is Sanuki-style noodles, made in-house from carefully selected flour and finished to order for each customer. Continuing this "freshly made, freshly boiled" approach every day at overseas stores is what allows the brand to reproduce the noodles' firm texture and aroma.

The number of restaurants serving udon overseas is growing, and the self-service format itself is straightforward to replicate. What is harder to see from the outside is what goes into the bowl. A proprietary broth refined over more than half a century, wheat sourced from selected regions, a stable procurement network backed by the scale of a listed company, and standardized know-how that lets a multinational staff reproduce in-store noodle-making — among the udon brands covered on this site, these four elements are rarely disclosed together in one brand's public materials. For an owner, partnering with a brand whose broth recipe and noodle process are already documented means fewer variables left to settle locally before opening.

Compact Stores in Stations and Airports — Designed Around Turnover

Overseas, Kineya Mugimaru sets up compact stores in high-footfall locations such as rail stations and airports. Its first European store at St Pancras and the store at Embankment are representative examples: both are easy for commuters and travelers to stop by mid-journey, and both offer takeaway.

The self-service format — buying a meal ticket from a vending machine and pouring your own broth — pairs well with these busy locations. A compact footprint that still turns tables quickly, combined with takeaway orders, is a pattern that tends to suit high-rent city-center sites. For an owner, that mid-journey use case is one of the clearest inputs when comparing candidate sites.

What a Small Store Count Changes — Local Adaptation Ahead of Scale

Kineya Mugimaru's overseas stores, centered on London, Cambridge, and Ealing in the UK, are still limited in number. Compared with udon brands that entered overseas markets earlier and now run large international networks, its overseas footprint is modest, and at this stage local partner companies are leading the way, adding stores one at a time through franchise and license agreements.

At a stage with fewer stores, the challenge of building out the operating structure still remains. At the same time, precisely because the scale is small, the brand can adjust to local eating habits — the separate vegan menu in the UK is one example visitors mention by name. That flexibility sits alongside one fixed operating requirement: noodles are still made in each store. Across three countries, the brand's overseas network still centers on around five UK stores, with the counts in the United States and Hong Kong not publicly broken out. Because the overseas store count is still limited, site options in each market remain relatively open. What this stage suggests is a window in which an operator can weigh locations and partnership terms while the category is still forming.

Reviews from Store Visitors

Asian dinner before the show at the theatre!

"I was in this Asian chain and we ate two bowls with various ingredients (noodles with chicken and shrimp). Excellent value for money. It runs late, so it was perfect to go eat here before going to see the show at the theatre (Lyceum Theatre which is just behind)."

Competing on time and location, not on scale

What reviews across these markets have in common is appreciation for the speed from order to serving, satisfaction with the price, and the convenience of being able to choose for yourself. As noted by many visitors, people seeking a quick meal in busy places such as stations and shopping centers are embracing udon, a Japanese noodle, as an option to fit between travel or shopping.

What emerges through this research is that this convenience rests on two layers: where the stores sit, and what happens in the kitchen behind the counter. The first is the store and operational design — focusing on stations and airports and serving quickly through a self-service format. The second is what defines every bowl: udon-making refined over more than half a century since 1967, combining an umami-rich Kansai-style broth with the craft of making noodles in-store. Rather than rolling out several hundred stores at once, Kineya Mugimaru has built up this flavor core carefully, one small store at a time. A clever approach to location can be adopted by anyone. What cannot be shortened, perhaps, is the time behind the bowl itself.
