Charcoal Grilling That
Gas Cannot Replicate

GYUSHIGE, an authentic yakiniku chain utilizing binchotan (premium charcoal), operates over 160 locations across Japan. While many chains prioritize efficiency by adopting gas roasters, this brand maintains a traditional cooking style using high-quality charcoal. Charcoal grilling uses far-infrared heat to lock in the meat's umami while creating a distinct, savory aroma.

This flavor profile, which differs significantly from gas-fired cooking, serves as a clear point of differentiation. Additionally, the use of shichirin (traditional clay grills) offers international customers an authentic Japanese dining experience, making it a compelling draw.

Key Features of
the Overseas Franchise

The Hardest Part, Already Solved.

In the food and beverage industry, introducing charcoal involves technical challenges such as smoke extraction and heat control. Through its long operational experience, Gyushige has systematized the know-how required to address these challenges.

This enables franchise owners to offer charcoal-grilled yakiniku—a category with high barriers to entry—while minimizing reliance on advanced technical skills. In markets where gas roasters are the standard, the shichirin itself tends to draw immediate attention from customers who haven't encountered the format.

Vietnam. Hong Kong.
Virginia. Yours Next?

The brand has established a presence in multiple international markets, including Vietnam, Hong Kong, and the United States, each with distinct business environments. This demonstrates the brand's ability to maintain core brand identity while adapting operational formats to local needs.

For example, side menus can be tailored to local tastes, and store designs can be adjusted to match target demographics. For operators navigating unfamiliar markets, that flexibility — format adapts, the core product holds — is worth noting.

Same Sauce. Every Store.
Every Market.

Leveraging its domestic and international store network, the brand's purchasing power helps optimize ingredient costs. By sourcing beef and other key ingredients in large volumes, it has established stable procurement channels for high-quality products.

In addition, sauces and dressings essential to flavor consistency are supplied as private brand (PB) products. This helps minimize variations in taste that typically arise from staff skill differences and supports consistent quality across multiple locations.

The System Behind the Smoke

I've watched a lot of Japanese restaurant concepts try to travel. The ones that struggle almost always have the same problem: a signature technique that lives or dies with a specific chef.

Gyushige built their entire identity around charcoal — one of the hardest methods to replicate at scale — and then quietly built the system to replicate it anyway. What the reviews from Ho Chi Minh City and Fairfax actually say is the clearest evidence: the consistency is landing.
